A sparkling wine method in which secondary fermentation takes place in the bottle.

<h2>What it means in wine</h2> <p>Traditional-method wines often spend time aging on lees before disgorgement and dosage. Champagne, Cava, Franciacorta, and many other wines use versions of this method.</p> <h2>Why it matters</h2> <p>Do not use “Champagne method” generically; Champagne is a protected name.</p>
