Yeasts present in the vineyard or winery environment rather than a selected commercial yeast addition.

Many producers use them intentionally; others choose selected yeast for reliability or desired aroma.</p> <h2>Why it matters</h2> <p>Do not imply that native yeast automatically makes wine more authentic, natural, or better.</p>
