Chouilly
Chouilly is a Grand Cru village at the northern end of the Côte des Blancs, close to Épernay. Chardonnay dominates its reputation, and wines can show apple, pear, citrus, white flowers, chalk, and a supple lees-informed texture. Chouilly is a useful label cue because it can feel a little more open and orchard-fruited than the most austere Côte des Blancs references while still clearly belonging to the Chardonnay-and-chalk family. The Grand Cru label reflects village classification, not a guarantee of a particular house style.
